What makes Luca's great?
1. Dough. A lot of pizzerias claim to “make dough fresh daily”. So what! Making dough daily doesn't make it good. Great tasting dough is a symphony of delicate interactions between yeast, sugar and the right amount of time so all ingredients can blend, that is what makes my dough special
2. Sauce. I add over 8 different types of seasonings into each 5 gallon batch. The seasonings are added at the right time during the simmering process. I slow sweat the onions, garlic, carrots, celery in extra virgin olive oil. Then I hand crush soft, sweet, tender, ultra-premium quality Alta Cucina Plum Tomatoes.
3. Cheese. Finally, I pile on an abundant amount of premium Pollyo Mozzarella cheeses in my opinion one of the best on the market on all my pizzas.
